Peppermint Blossoms


We finally had a chance to meet up with our friends for a belated Christmas shindig. It has kinda become a tradition over the past 3 years. We pick a Friday or Saturday night in January, meet up for dinner / drinks and exchange all our gifts. I wanted to stick with handmade gifts this time around. I ended up baking these yummy cookies for both my guy friends. They were a hit. Gare even asked me to make them every Christmas. He's really, really big on sweets. I'll more than likely agree to it. For this recipe you'll need 2 baking sheets, parchment paper, 2 large mixing bowls and an electric mixer.

Ingredients:

3 cups all-purpose flour
⅓ cup unsweetened cocoa powder
1 tsp baking soda
¼ tsp salt
1 cup unsalted butter - softened
1¾ cups sugar - divided
2 large eggs
1 tsp vanilla extract
1 tsp peppermint extract
40 Hershey kisses
(I used both candy cane and hugs)

Preheat oven to 375° F. Line both baking sheets with parchment paper and set them to the side. In a medium mixing bowl, combine the flour, baking soda, salt and cocoa powder. In the second mixing bowl, beat butter and only 1¼ cups of sugar on medium until it looks fluffy. It took about 2-3 minutes. Slowly beat in eggs, one at a time, until they are well combined. Beat in the peppermint and vanilla extract. Gradually add your flour mix to sugar mixture on the lowest speed, just until it's mixed well. At this point, I rolled the mix into a big ball of dough. I wanted to make sure all the ingredients were totally combined. Roll the dough into 1-inch balls. Coat each ball in the remaining ½ cup of sugar and place onto the baking sheets. Bake them until the outside starts to crack a bit. It took about 10 minutes. Take them out, cool for 5 minutes before topping each with a Hershey kiss. The kisses may melt if the cookies are still too warm. Continue to let them cool completely.
